I found a deal on some Mavics but they 11 speed hubs. My LHT uses a 10 speed sprocket. Would that be ok?

What Mavic model are they?

If the Mavic freehub body is for Shimano/Sram, you will need to space your cassette on the body.

Are these wheels new? If so, they should come with an accessory pack that will have a 1.85mm spacer. You will need a second 1 mm spacer (usually provided with a new cassette) and you are set to go!

They would be from bikes direct. They should be new but I don't know if they come with all the extra packaging of spacers but I would be surprised if they didn't.

Aksiums or Ksyrium Equipe S? I see these as options on that site. I would imagine these are new and come with everything you need. The "A Pack" should have front/rear skewers, tire lever/bearing adjustment combo tool, cassette spacer and sticker kit.
