The recipe says "Red Ale" (Home Brew Mart starter recipe). I'll be happy if it actually has alcohol in it.

if you waited for the wort to cool before adding the little guys, the yeast should be very active very soon. hopefully you're doing the hose in a bucket of water airlock...

What's the hose in a bucket of water airlock? You stick a hose in the fermenter lid, and put the other end in a bucket of water? Is this better?

Time frame is 3-4 weeks.

yes. lid? you're doing your primary in a bucket?

the hose is the same diameter as the one that you use to fill bottles if i remember correctly.

the yeast will blow so much stuff out the first few days. it will be spewing out of the little plastic airlock.

make sure everything that comes in contact is properly sanitized...

Yeah. Fermenting in one of those plastic bucket things. The yeast are quite lively right now.

if you like doing this, i'd recommend fermenting in glass. you can use the bucket for bottling...

even though the bucket is food grade, you could scratch it and get bacteria in there. the plastic will take on flavors. the bucket won't seal as well as glass with a rubber stopper. the glass is transparent though, so you'll have to store it in a closet. it's a bit harder to clean, but i would just let it soak for a while and then hit it with a bottle washer and a scrub brush.

I opened one bottle tonight as a test. It wasn't good, but it wasn't bad. I call it a success. I managed to brew beer and it:
1) Wasn't contaminated
2) Was carbonated
3) Tasted like beer

I had another one tonight after two full weeks in the bottle. It actually tastes much better. What a difference a week makes.
